ARUGULA AND PROSCIUTTO SALAD

INGREDIENTS

  • 2–3 cups arugula, washed
  • 6–9 thin slices of prosciutto
  • ½ cup chopped tomato
  • ½ cup sliced olives

For the dressing

  • 1 tablespoon
  • extra-virgin
  • olive oil
  • 1 teaspoon balsamic vinegar

DIRECTIONS

  1. In a medium-sized bowl, toss together the arugula, prosciutto, tomato, and olives.
  2. To make the dressing: Mix together the olive oil and vinegar.
  3. Toss the salad with the dressing, or serve the dressing on the side.
